  • fresh basil

  • garlic
    2 cloves
  • good extra virgin olive oil
  • grated pecorino or parmesan cheese
    20 g
  • pasta
    8 oz
  • pine nuts
    20 g
  • salt

    Boil water for pasta .

    Slice garlic and put in mortar with a pinch of salt . Grind until a paste.

    Add pine nuts and grind until smooth.

    Add fresh basil and grind until smooth.

    Add grated pecorino or parmesan cheese and grind until smooth.

    Stir in good extra virgin olive oil with wooden spoon until it comes together into a thick, saucy consistency.

    Drain pasta, but leave some pasta water.

    Stir pesto into pasta. Adjust consistency with pasta water and/or more good extra virgin olive oil .
